About Dietz Distillery
Dietz Distillery is the concept and dream of Dietz Fischer of Fredericksburg, Texas. He was inspired by being raised in the family business, Fischer & Wieser Specialty Foods; and like his father before him, he caught the bug to create a unique product and bring it to market. Dietz, along with his sister, Elle, will kick off the Dietz Distillery brand with its first product, Five Judges Gin- a juniper forward, dry London style gin with hints of Rio Grande Valley citrus. At Dietz Distillery, you will be able to experience first hand how the product is created, manufactured, and bottled. Along with Five Judges Gin, you will also be able to try peach and pear brandy, an orange liqueur, seasonal eau de vie’s, and raspberry vodka. All of course made with ripe, fresh, homegrown, and locally sourced fruit. Stop by on your next visit for a tasting and enjoy sipping outside with a view of the pines!
Dietz Distillery is a small artisan distillery practicing old world distilling techniques where consumers will learn about the process and history of alcohol distillation as well as explore the expansive world of spirits and how they have come together to make the cocktails we know and love.
About the Distiller
Case Dietz Fischer grew up in the small German immigrant community of Fredericksburg, Texas. As a fifth generation Texan, Case grew up assisting wherever needed on his family’s peach farm as well as in their family owned and operated business, Fischer & Wieser Specialty Foods that was started by his father and close family friend Mark Wieser. Case earned an undergraduate degree in Manufacturing and Mechanical Engineering from Texas A&M University. During that time, he gained an interest in the distilling operation- searching for any material he could find on every aspect of the distilling process. In order to gain more hands on knowledge, he interned at Garrison Brother’s Distillery in Hye, Texas. Along with Garrison Brother’s, he interned with Marcus Wieser, a master distiller in the Wachau valley of Austria. Small scale fruit distilleries have a long tradition in Central Europe, and working with Marcus was what gave Case the idea of building a distillery focused on producing smaller batches of high quality spirits.
After obtaining his undergraduate degree and moving back to Fredericksburg, he began to work on his plan for his distillery- one focused on making gin and a variety of traditional Eau De Vies; as well as innovating and discovering new spirits and flavors. As Case was focusing on starting up his distillery, he earned his diploma in distilling from the Institute of Brewing and Distilling, based in Scotland. The end result is Dietz Distillery, in Fredericksburg Texas- a farm distillery built upon the German and Austrian tradition dedicated to creating unique, high quality spirits and sharing the fascinating history and process of distilling to the public.
